MARCH Pop-Up Cellar Door Sale

Foodies Weekend Away!

What a huge foodies weekend: making salami on Saturday & Truffle hunting on Sunday! Both first time experiences for Josef & Ande.    DAY 1 – SALAMI MAKING: The weekend started at Joe & Silvana’s East Brunswick house to learn how the Italians make Salami & fresh sausages. With 40 kgs of quality shoulder pork, female pig of course, we started mincing and preparing four kinds of Salami. The spicy red chilli and roasted paprika paste and the mild fennel seed with white wine & cracked pepper were my two favourites. JOSEF'S RECIPE: Hot Cross Buns

It’s just not Easter without Josef's Hot X Buns – Tastes so delicious hot out of the oven, not to mention how sweet it makes the whole house smell! INGREDIENTS 290 ml Water1 egg, lightly beaten2 tbsp, Butter1 tsp, Salt2 tbsp Sugar3 ½ cups, Bread Flour2 tbsp, Milk Powder1 tsp, Bread Improver3 tsp, Dry Yeast1 tbsp, Ground Cinnamon1 tbsp, Mixed Spice METHOD 1. Place all the ingredients in electric bowl mixer (with hook) and knead for 15 minutes2. Then add the following ingredients to the bowl and knead for a further 5 minutes:- 1 cup/100g Sultanas- ¼ cup/45g Mixed Peel3. Divide dough into 18 pieces and turn out on a lightly floured surface.
